I'm halfway through the Tone It Up Challenge! Week 5 started this week, and I have to admit that it's flying. Focusing on exercise and healthy eats has been easier than I was expecting. I think it's been a combination of things: start of the new year, the online TIU community, the results I'm seeing, etc.

As I mentioned in my last post, I'm not strictly following the TIU nutrition plan but am focusing on meal planning, portion control, and the Lean Clean'N Green mindset. Here's a peak at what I've been eating over the past month!




Chia Seed Pudding! I've seen this all over instagram and twitter but was never interested in making it. Sure, I've been eating chia seeds regularly over the past four years...but pudding? That seemed so weird. But I finally tried it...and now I'm obsessed. I simply mix together unsweetened almond milk, chia seeds, frozen raspberries, cinnamon, and vanilla extract. I make a big batch Sunday evenings, and then eat this for breakfast throughout the week. I top it with a sliced banana, sliced almonds, and unsweetened shredded coconut. So delicious and so filling!


Avocado Toast! This is not new to me. In fact, I ate it for breakfast pretty much every.single.day when we lived in California. I was happy to see this on the list of TIU-approved meals!



Fresh produce + ACV shots! I've always been a snacker, and it got to the point of it becoming such a mindless habit. TIU has helped me recognize my snacking habits and make wise choices for those in-between-meals snacks. I try to stick to fresh produce (clementines are my go-to afternoon snack right now, but I also try and choose fresh veggies like carrots). As for apple cider vinegar shots, I try and drink one of these a few times a week in the morning. I use ACV, orange juice, turmeric, ground ginger, and cayenne. It's sharp -- but I like it!



GREENS! I've had more spinach and kale in the past month than I can count! I love sautéing kale with a bit of olive oil and onion, and then I squeeze fresh lemon juice over it. I also love fresh spinach salads with lots of toppings!

That's obviously not everything I've been eating, but I think it's a good overview of what I've been enjoying since starting the TIU Challenge!
