Soup season is in full force! I love how easy it is to make flavorful soups, so I've been whipping up big batches on a weekly basis. Also, any recipe that calls for a slow cooker is hands down my favorite kind of recipe!
Have you heard of Raw Spice Bar? It's a monthly subscription service that sends out small batch, freshly ground spice packets. The cool folks at Raw Spice Bar were kind enough to send me some spices, and I've been loving them! The spice packets are extremely unique and so convenient to use and incorporate into recipes. Each month has a different theme, and it's a great way to try out spices from around the globe!
I found a recipe for a red lentil soup in the slow cooker, and while I was throwing everything into the pot I decided to toss in the Malaysian Laksa Spices packet from Raw Spice Bar as well. It was a good decision!
This was such a comforting meal! The Malaysian Laksa Spices paired perfectly with the red lentils, carrots, onion, and diced tomatoes.
Red Lentil Soup (Slow Cooker)
Adapted from Vegan in the Freezer
1 1/2 cups dried red lentils
32 oz. low sodium vegetable broth
3 carrots, sliced
1 onion, sliced
14 oz. can diced tomatoes
4 oz. tomato paste
3 garlic cloves, minced
1 packet - Malaysian Laksa Spices from Raw Spice Bar
salt and pepper, to taste
Place all ingredients in a slow cooker. Stir and give it a good mix. Cook on low for 7-8 hours. Enjoy!
