What I Ate Wednesday

Hello! I am joining the What I Ate Wednesday party once again. I forgot how much I enjoy reading everyone's posts -- it definitely gives me ideas for new recipes and meals!

Breakfast


I've been eating overnight oats for breakfast for the last couple of weeks. I simply add oats + milk (a 1:2 ratio) in a bowl with chia seeds and cinnamon. I stir it all together and set it in the fridge overnight. In the morning, I add fruit + raw shelled hemp hearts.


I found rainier cherries on super sale at Trader Joe's last week -- a delicious addition along with blueberries. Of course, I drink all the coffee in the morning!

Lunch


I have been loving bean + brown rice bowls for lunch lately. So delicious and healthy - plus, you can customize them so easily. The picture above includes: black beans, brown rice, tomatoes, and cucumbers. Then I added a simple sauce of plain Greek yogurt mixed with Trader Joe's hatch valley green salsa.

Another combination I like: chickpeas, brown rice, corn, zucchini, and cucumbers. Same sauce!

Dinner


We've been grilling out every.single.night this summer, and I absolutely love it! Pictured above: grilled veggie burger, lentil rice pilaf, roasted broccoli, and watermelon.

Snacks



I love Trader Joe's iced coffee concentrate - I add ice cubes and milk. Mmm! Apples + peanut butter is a staple snack for me (love TJ's chia and flax version!).

Unpictured snacks: cheese sticks + Colby Ridge popcorn. I love the trio mix of salted, cheddar, and caramel. It's becoming quite the habit for me!
