I am a big fan of my slow cooker. We received a 6-quart model for our wedding over five years ago (which also...five years? Crazy.), and I use it regularly. Nothing is better than coming home from a long day to dinner all ready to go. I love walking through the front door as the smell of warm curry and chili powder hits me. I have a tendency to get extremely lazy at night, so prepping things in the morning is super beneficial.

(Side note: you do have to cook the quinoa separately if you want to put the slow cooker on low for 6-8 hours, but I'd hardly call that work.)

I have been making a concerted effort to get more protein in my daily diet. I started tracking my protein recently and found out that it's quite low. With the upcoming half marathon (oh, I signed up for a half marathon -- more to come!). I've been trying to cut out mindless snacks and instead choose cheese sticks and soft/medium-boiled eggs. For lunches, I've been enjoying green smoothies that include one cup of plain 0% Greek yogurt.

As for dinners, this soup provides a great protein punch. Enjoy!

Slow Cooker Chicken & Sweet Potato Soup

  • 1 pound chicken breasts
  • 2 medium sweet potatoes (about 2 1/2 cups), diced
  • 2 cups chopped broccoli
  • 1 - 15 oz. can black beans, rinsed/drained
  • 1 - 14.5 oz. can diced tomatoes
  • 4 cups low sodium chicken broth
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon curry powder
  • 1 teaspoon smoked paprika
  • 2/3 cup quinoa, uncooked

In a slow cooker, place the chicken breasts on the bottom. Add the sweet potatoes through paprika and give it a good stir. Cover and place on low for 6-8 hours.

When ready to serve, cook the quinoa on the stove according to package directions (1 part quinoa to 2 parts water, boil then cover/simmer for about 15 minutes). Meanwhile, shred the chicken breasts using two forks. The add cooked quinoa to slow cooker, stirring to mix it up.

Yield: 8 servings

    1. For sure! You definitely have to plan ahead, but it is so worth it. :)
