Last week at Whole Foods I made an impulse purchase (don't we all?) -- coconut date rolls. Have you had them?
They are sweet, filling and a fairly healthy alternative to satisfy a sugar craving. I think I paid roughly $6 for a small package (maybe like 8-10 rolls were included).
The ingredients? Simply dates and coconut. That. Is. It. Clearly, I could re-create these at home for a fraction of the cost!
I bought this bag of Dole dates from Amazon Fresh for $3.69. (Yes, we totally signed up for grocery delivery -- I must write a post about that!). Anyway, I bought shredded coconut from the bulk bins at Whole Foods. I believe the price was $4.49/lb., and I definitely didn't use a pound of coconut in this recipe, which made 16 coconut date balls. Saving money, folks!
These are SO good. My sweet tooth has been out of control lately...hello Easter candy and too-many-brownies-in-a-mug. Ugghh. But I'm confident having these available will help me make a better choice when my sweet tooth starts acting up!
Coconut Date Balls
8 oz. pitted dates
1/4 cup shredded coconut
Place dates and coconut in a food processor. Process until well combined. Transfer to a sheet of plastic wrap and roll into a log. Cut into 16 even pieces, and then roll each piece into a ball. Store in air-tight container in the refrigerator for up to 7-10 days.
Yield: 16 balls
