I skipped Menu Plan Monday last week because I was busy drinking beer (!) and enjoying my day off from work. I'm back this week with our menu and am happy to share that it consists of three new-to-me recipes!
Last week I actually made a pork roast in the slow cooker, which we then had every.single.day. I whipped up a new veggie and side dish every night to keep it fresh. Since we consumed so much meat last week, I'm bringing a bit of balance to our lives and sticking with vegetarian meals this week.
Menu: January 27 - 31
Monday: Vegetarian Lasagna Soup
Tuesday: Soup Leftovers
Wednesday: Dragon Noodles w/ Tofu
Thursday: Chickpeas in Spicy Tomato Gravy w/ Basmati Rice
Friday: Pizza w/ Side Salads
