Happy Menu Plan Monday! As I mentioned last week, each Monday I'll be linking to OrgJunkie.com's Menu Plan Monday. I'm thinking this will keep me motivated to plan our meals each week and also offer inspiration.
I'm a huge fan of leftovers (hello, cook once-eat twice!), so I always plan on leftovers throughout the week. A big pot of soup can sometimes provide at least three meals between the two of us -- cheap AND easy.
I never made the sauteed carrots from last week, so I'm rolling them over into this week's meal plan. I've made the Spicy Sausage Pasta and Vegan Lentil Stew before -- two of our favorites. This doesn't really follow one of my 2014 resolutions of trying new recipes, but it's been a while since I've made either.
Menu: January 13 - 17
Monday: Spicy Sausage Pasta + sauteed carrots
Tuesday: Pasta leftovers + side salads
Wednesday: Vegan Red Lentil Stew
Thursday: Stew leftovers
Friday: Whole Foods frozen pizza + side salads
