Lemon Cupcakes with Coconut Cream Cheese Frosting

Today is a very special day! A virtual baby shower is happening for a dear blogging friend of mine, Krystal, of Mrs. Regueiro's Plate. You might remember I participated in one for her last year around this time, and we're at it again as Krystal is expecting another baby soon!


Krystal has been so sweetly referring to the baby as "cupcake," so it's only natural that cupcake is the name of the game for this virtual baby shower! 


I've been reading Krystal's blog for quite some time now and actually met her at Foodbuzz back in 2011. She is so sweet, just like these lemon cupcakes I made for her!


Tart lemon cupcakes topped with sweet coconut cream cheese frosting and sprinkled with toasted coconut. There's a lot going on here, and they are just lovely.

FYI - I used this recipe for the lemon cupcakes and this one for the coconut cream cheese frosting. Both were perfect, so I didn't make any changes.
