Balsamic-Glazed Pork Chops

Evan and I eat a lot of vegetarian meals. I find cooking veggie meals to be simple, quick and cheap. A can of black beans for 89 cents? Yes, cheap indeed.

We usually only have meat with dinner once a week, and it's almost always chicken. Lately, I've been buying boneless top loin pork chops from Whole Foods. I believe they're $6.99 or $7.99 a pound, and we only buy a 1/2 pound for one dinner. Three dollars isn't too shabby!

I kind of forgot how simple pork chops are to cook -- they cook up rather quickly, which makes them a great choice for an easy week-night meal. 

Anyway! I followed this recipe, and we absolutely loved it! As you can see, we enjoyed the chops with a simple side salad and baked sweet potatoes. What a comforting meal!

  2. I've gotten to be the same way with meat, and for the same reasons - non-meat dinners seem to be simpler and are definitely cheaper! Pork chops do sound great though - perhaps that'll be my meat purchase this week!
