Sometimes I feel like a broken record, but I really am a fan of simple meals. I absolutely love spending time in the kitchen, don't get me wrong! It's just that after being at work for eight hours every day, I look for easy weeknight meals that are quick and fresh - but also delicious!
You can bet that Evan and I enjoy a lot of pasta because of its simplicity. Pasta is so versatile, so it never gets old! Psst...this is my favorite pasta sauce ever: tomatoes, an onion + butter.
We received cauliflower in our Full Circle Farms produce box a few weeks ago. I absolutely love roasted cauliflower, so when I came across a recipe for pasta that included this roasted deliciousness, I knew I had to try it.
This is one of those simple meals that tastes fancy, and yet it's just pasta, caulilfower and sausage! Ok, and cheese if you're being serious! The flavors just work really well together. Enjoy!
Pasta with Sausage and Cauliflower
Adapted from: Cooking Light
2 cups uncooked whole wheat pasta (I used shells!)
1 medium head of cauliflower, cut into florets
1 tablespoon olive oil
salt & pepper, to taste
2 chicken sausages, cut to 1/4-inch slices (any flavor you choose!)
1/4 shredded parmesan cheese
Preheat oven to 400 degrees.
Toss the cauliflower with the olive oil, salt and pepper until well-coated. Place on a baking sheet lined with foil. Add sliced chicken sausage to the cauliflower - spreading them out evenly. Bake for 20-25 minutes.
Meanwhile, in a medium saucepan, bring water to a boil. Add pasta and cook per directions on the pasta package. Once done, drain - reserving 1/4 cup of the pasta water.
Add the cauliflower and sausage to the pasta and reserved water. Sprinkle in parmesan cheese, stir and serve hot.
Yield: 2 servings
