This much I know: Saturday mornings are for fun, indulgent breakfasts.
After sleeping in until 8am (seriously, when did waking up at 8am count as sleeping in?!), Evan and I read in bed for a bit. Him: the New York Times, her: Masters updates, blogs and Twitter. We were then ready to take on the day!
Evan's in charge of breakfast on the weekends, and he had the delicious idea to make waffles with homemade strawberry syrup.
The man's a genius, my friends.
He kept the waffles simple and used the multi-grain baking mix from Trader Joe's. The star of the show was the strawberry syrup!
I can't explain the sweetness of the syrup. I just can't!
We paired this delicious breakfast with some home-roasted coffee made in a French Press and mixed with a bit of soy creamer. Perfection.
1/2 cup water
1/4 cup sugar
3/4 cup strawberries, cut/mashed
In a small saucepan, bring the water and sugar to a boil. Add in strawberries then reduce heat to a simmer. Cook for 10 minutes until the mixture has thickened, stirring often.
Yield: 2 servings
