White Chocolate Cranberry Pecan Cookies

Oh, hi. Remember me? You know when people say things just get crazy during the holidays? Yeah, those people were not kidding.


But I know I'm not the only one whose life is extremely busy right now, so how about I share a fun little holiday treat that comes together in no time? I thought so!


As you know, I'm a Love Blogger for Love Grown Foods. LGF issued a little challenge for Love Bloggers - a cookie challenge!


I knew I wanted to use their fabulous Sweet Cranberry Pecan granola. Hello, cranberries are so in during the holidays. I decided on two other flavors that also represent this glorious season: white chocolate and cinnamon. Am I right?!


Ok, I'm all about simple recipes - and this one couldn't be easier! You literally just melt some white chocolate chips, sprinkle in some cinnamon and stir in the granola. That is it!


You can thank me now or later. Either way, I know you'll be thanking me for this divine little holiday indulgence.


By the way, I only made a few cookies because Evan and I are leaavvvin' on a jet plane... tomorrow for Nebraska! Feel free to double (or triple!) the recipe. 

White Chocolate Cranberry Pecan 
No-Bake Cookies
Inspired by: Granola Cookies

Ingredients:
3/4 cup white chocolate chips
1/2 teaspoon ground cinnamon
1 cup granola, Sweet Cranberry Pecan from Love Grown Foods

Directions:
In a microwave-safe bowl, add the chocolate chips. Cook for about 90 seconds - checking every 15 seconds to stir (be careful not to burn!). Add cinnamon, whisk to combine. Stir in granola.

Line a baking sheet with wax paper. Use a cookie scoop or tablespoons to form little mounds, place on the wax paper. Freeze for 15 minutes for the chocolate to set, then store at room temperature. ENJOY!

Yield: 6-8 cookies
