Christmas cookies and holiday treats make December the best month of the whole year. Am I right?!

I decided to kick-off my holiday baking with some short-cut cookies.


I received some coupons a few weeks ago through the Foodbuzz Tastemaker Program with Duncan Hines. 

I decided to put a little unique twist on a box of Dark Chocolate Fudge Brownies.


Enter: mint extract.

Mint and dark chocolate? Well, that's a wonderful holiday combination!


These brownie cookies are chewy and delicious - I'd definitely make them again. I rarely use box mixes, but I think they have their place in the kitchen on occasion. 

Some notes: I used a 1 1/2 tablespoon cookie scoop and made 18 cookies. I had to bake mine for 16 minutes. If you make smaller cookies, you'll want to start checking them around 10 minutes (which is why a large timeframe is listed in the recipe).  

Mint Dark Chocolate Brownie Cookies
Adapted from: Dark Chocolate Espresso Cookies

Ingredients:
1 box Dark Chocolate Fudge Brownies
1 egg
3 tablespoons water
3 tablespoons canola oil
1/2 teaspoon mint extract
1 cup chocolate chips

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine brownie mix, egg, water, oil and mint extract. Stir vigorously with a fork until well combined. Stir in chocolate chips.

Drop by rounded spoonfuls onto cookie sheets. Bake for 10-16 minutes. Cool on cookie sheets.


Yield: 18 cookies
