Choconut Cookies

Hola! Hope you all had a lovely weekend! I swear Mondays just seem to come out of nowhere, don't they?! I figured I'd share a cookie recipe with you to start the week off with a bang. 


Over the past year, I've become obsessed with coconut. This is quite funny as I used to hate it growing up. I'm so glad I got passed that!

Here's a word you need to become familiar with: choconut.

Chocolate + Coconut = Choconut!


Friends. These Choconut Cookies are flippin' amazing. I'm eating one right now as dinner cooks away in the oven (Stewed Vegetable Gratin). I just can't help myself!


Chocolate chips and shredded coconut make for a fabulous combination. Please, please make these! They are simple to whip up and absolutely delicious. Enjoy!

Choconut Cookies
Adapted from: All Recipes

Ingredients:
1/2 cup butter, softened
1/4 cup + 2 tablespoons white sugar
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup + 2 tablespoons flour (half all-purpose, half white whole wheat)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup shredded coconut (sweetened or unsweetened)
3/4 cup chocolate chips

Directions:
Preheat oven to 375 degrees.

In a large bowl, cream together butter, white & brown sugar. Beat in the egg and stir in vanilla.

In a medium bowl, sift together the flour, baking soda and salt; stir into butter mixture. Fold in coconut and chocolate chips.

Drop by rounded spoonfuls onto cookie sheets. Bake for 10-12 minutes, until golden. Remove from pan immediately and cool on wire rack.

Yield: 2 1/2 dozen

  1. I made these today and they are absolutely amazing. I cannot get enough. Soft and chewy and just the right blend of coconut and chocolate chips. This is my new fav. Thanks for the great recipe.
