Please tell me I'm not the only one who's obsessed with the 1/2 and 1/2 combo from Panera. You know, choose two of the following: soup, sandwich or salad.
I should clarify - I was obsessed. I can't seem to find a Panera here in northern California. But believe me, I was all over the 1/2 and 1/2 combo when I was in college back in Nebraska. Oh, college.
I decided to bring the delicious combination of soup and salad straight to our kitchen table to fill the void.
I found this Creamy Corn & Roasted Pepper Soup at Trader Joe's. I love their soup cartons! I usually roll with the low sodium Roasted Red Pepper soup, but this one called out to me.
I added in a dollop of plain Greek yogurt - perfect!
For the other half of the meal, Evan and I enjoyed a simple salad with mushrooms and some Simply Dressed Champagne Vinaigrette from Marzetti. I received a sample of the vinaigrette through the Foodbuzz Tastemaker Program.
It's actually pretty mild-tasting for a vinaigrette (I feel like most vinaigrettes pack a lot of zing!). I really enjoyed this one, and the fact that it's made with all natural ingredients. I had it on a salad again today with cherry tomatoes and cashews, and that was a delicious combination!
