Braised Kale

Dinosaur Kale is an interesting leafy green vegetable.

To be honest, I had never heard of it until it showed up in our CSA box last year. Now it's become a staple in our household since it always seems to be hiding in our produce box.

It's great to add to soups, but I was feeling something different with this bunch.

Dino Kale can be quite bitter, so it actually pairs quite nicely with the warm, comforting taste of caramelized onions.

We had baked tofu with the kale and onions - everything tasted delicious together!

Braised Kale

1 tablespoon olive oil
1 onion, thinly sliced
2 garlic cloves, minced
1 bunch (about 4 cups) loosely-packed chopped dino kale
1/2 cup low-sodium vegetable broth
1/4 cup water
1/2 teaspoon red pepper flakes
1 tablespoon red wine vinegar
salt & pepper, to taste

Heat olive oil over low-medium heat in a large skillet. Saute the onions and garlic for 10 minutes, stirring frequently.

Add kale, broth, water and red pepper flakes. Cover and simmer for 10 minutes. Add vinegar and season with salt and pepper. 

Yield: 3 servings
