Sausage & Summer Vegetables

I think we've established the fact that I've become just a bit obsessed with the chicken sausage from Trader Joe's, as evidenced by Chard & Chicken Sausage, Drunken Chicken Sausage Pasta, Fresh Tomatoes & Chicken Sausage Pasta, and finally Sausage Cabbage & Apple Soup. 

We're still eating a lot of vegetarian meals, as well as fish, but we have chicken sausage about once a week. I really can't give a reason for the return of meat into my life - I've just been craving it, buying it and eating it. 

I found this recipe for Smoked Sausage and Vegetable Pile-Up on My Recipes and was intrigued. You'll notice I made an easy swap of couscous for the originally-stated mashed potatoes. I love finding recipes and adjusting the ingredients to my preference!

I used Smoked Andouille, and man! It was spicy! No other spices were needed - the vegetables and sausage provided enough flavor. 

Oh, and I totally used frozen corn (no shame). This would be amazing with fresh corn - straight from the cob!

Sausage & Summer Vegetables with Couscous
Adapted from: Smoked Sausage and Vegetable Pile-Up

2 Smoked Andouille Chicken Sausages from TJ's, sliced
1 tablespoon olive oil
1 onion, chopped
1 green pepper, chopped
1 small zucchini, chopped
1 1/2 cup frozen corn
2/3 cup water
2/3 cup couscous

Heat a nonstick skillet over medium heat. Add sausage and cook for 5 minutes - remove from pan and keep warm.

Return pan to heat and add oil, onion, pepper and zucchini. Saute for about 5-7 minutes, until soft.

While the vegetables cook, bring 2/3 cup water to a boil in a small saucepan. Add couscous, remove from heat and cover - let rest for 5 minutes. 

Add corn and sausage to vegetable mixtures and cook for 3-4 minutes until heated through. Serve with couscous.

Yield: 2 servings
