Imagine my excitement when I decided to throw those three things together and make a delicious summer salad. Topped with feta...because I'm obsessed.
Check out that vibrant watermelon. Oh, folks! This crisp salad was completely refreshing.
For those of you wondering about those lemon cucumbers - this is how I used them! I almost feel bad calling this a recipe because it's so darn simple!
Sensational Summer Salad

2 lemon cucumbers, sliced into wedges
1 tomato, chopped
1 cup chopped watermelon
drizzle of balsamic vinegar
sprinkle of feta
dash of pepper
Combine everything in a small serving dish and serve. That's it!
I served this salad alongside some baked tofu and Birds Eye Steamfresh Chef's Favorites: Mushroom & Green Bean Risotto.
As part of the Foodbuzz Tastemaker Program, I was sent a few Birds Eye frozen products to try. This risotto was pretty darn delicious and made for a really easy side dish.
Ok, this tofu rocks. If you've never had tofu, try this sweet & spicy baked tofu. It's so delicious!
