Hello! How did this fine Monday treat you? Mine has been going really well - work flew by, and I was super productive. LOVE those kind of Mondays!
When I posted about dino kale last week, a few of you were interested to see what I was going to do with it. It is a weird-looking leafy green, so I don't blame you!
I decided to take the easy route and just saute it. Simple but delicious!
Sauteed Dino Kale

1 tablespoon olive oil
1/2 onion, chopped
1 garlic clove, minced
1 bunch dino kale, de-stemmed and torn into bite-sized pieces
1 tablespoon red wine vinegar
Heat the oil in a skillet over medium heat. Saute the onion for 3-4 minutes. Add in garlic and stir constantly for 1-2 minutes, being careful not to burn the garlic!
Add kale to skillet and saute for 5-6 minutes. Pour in red wine vinegar, then remove from heat. Enjoy!
Today marks the start of my 10K training. I'm running in the Half Moon Bay International Marathon (the 10k race) in September. I'm going to be [somewhat] following Hal Higdon's training schedule. While The Granola Chronicles won't turn into a fitness/exercise blog, I might post semi-regularly about my training...just FYI. :)
