It's been a whirlwind of a day, so I thought I'd keep this post short and share that green bean recipe I've been keeping from you!
I made one of the easiest side dishes ever to accompany those Quinoa-Stuffed Mushrooms.
I was inspired by a recipe in that Trader Joe's cook book (the same one from which I adapted the mushrooms - I was definitely digging TJ's that night!).
I omitted the red onion in the original recipe and didn't miss it! Basically, you just boil or steam a pound of green beans and slather them all in a dressing consisting of: 1/2 cup plain Greek yogurt, 1/2 cup feta cheese and 1 tablespoon red wine vinegar.
Seriously...they are so, so good! Completely easy too - although that's a description I'm using for all the recipes I post!
I feel like feta is one of those cheeses that people either love or hate - what's your stance?!
Me? I could literally put feta on anything - I just love its saltiness! :)
