Food Excitement

Yesterday's breakfast and dinner were stand-out meals. They both left me feeling so satisfied, healthy and just plain excited. Is it weird that food makes me so, so happy?!



Coach's Oats cooked with cinnamon and mixed with organic strawberries and raspberries, drizzled with honey and topped with coconut and walnuts. And there was coffee. Of course, I had coffee!


Mmmmm.


Evan was on a camping trip last night, so I was rollin' solo for dinner. I cooked up some whole wheat couscous from Trader Joe's and added in some amazing veggies.


I hardly call this a recipe because it's really simple. But here ya go!

Couscous Salad
The Granola Chronicles Original

Ingredients:
1/3 cup water
1/3 cup dry whole wheat couscous
1/2 avocado, diced
1 tomato, chopped
1/2 small cucumber, diced
1/3 can chickpeas
drizzle of TJ's champagne vinaigrette (or any type of dressing)
feta cheese

Directions:
In  small saucepan, bring the 1/3 cup water to a boil. Remove from heat, stir in the couscous, cover and let sit for 5 minutes.

After the couscous has absorbed all the water, transfer to a bowl. Add the remaining ingredients. ENJOY!


Have you ever tried couscous before?

I finally had couscous for the first time last week! Last night was my first time trying the whole wheat variety - and it trumps plain couscous, for sure! Now that I know how easy it is to prepare, I have a feeling we'll be eating a lot of it.
