Lemon-Cumin Carrots

Hola, friends! Three cheers for Friday. Gosh, weekends are so fun. I wish we had them a few times a week. :)

As you know, Evan and I are up to our eyeballs in carrots. We've seriously received them every week since we joined the CSA program in November. That's a lot of carrots. Like, a lot.

While I love nut butter carrot fries which are roasted, and carrots in soup - I really don't enjoy any other type of cooked carrot. They just taste...weird.

Or so I thought!

I decided to try boiling some carrots the other night. I added a simple little glaze of lemon juice, olive oil and cumin. 

I could NOT stop eating these! Absolutely delicious. 

Lemon-Cumin Carrots

8 medium carrots, 1/2-1 inch slices
juice of half a lemon
1 t. olive oil
1/4 teaspoon cumin
salt & pepper, to taste

Fill a medium saucepan with water and bring to a boil. Add carrots and boil for 10-12 minutes. Drain and transfer to serving bowl.

In a small bowl, combine the remaining ingredients. Drizzle over carrots and toss gently to coat. Season with salt and pepper, if desired. Enjoy!

Yield: 3 servings

I'm not exactly sure how Evan and I will be spending our evening. He's finishing up some statistics homework right now and should be home in a bit. Whatever happens, you can bet we'll be enjoying some wine!
