Warm Quinoa Salad

So I never thought I'd be one of those women who takes pictures of herself via computer to post on her blog...but here I am doing just that.


I like to think getting my haircut makes this okay. I really wanted to show someone my new 'do, so I'm showing you!

I can't even begin to describe how ecstatic I am that the weekend is here. Something super exciting is happening on Sunday, and I can't wait. 



For now, I thought I'd share a delicious warm quinoa salad with you. While I can hardly claim this is an actual recipe (I literally just eye-balled everything), I can say it was extremely delicious. And healthy to boot!


I cooked up a rather large batch of quinoa in low-sodium veggie broth on Sunday. I kept it stored in the fridge - it makes for an easy addition to lunches and dinners.

To the warm quinoa, I added:

corn
zucchini
black olives
edamame
TJ's Goddess Dressing


Alright, I'm thinking tonight is a good night to bust into that sweet Moscato wine that we purchased up in Sonoma a few weeks ago

While Evan usually goes for bold reds (and Malbec is my absolutely favorite!), I do enjoy a nice sweet wine...so long as it's a super hot day, and it's enjoyed outside!
