Green Day

No, no - not the band! Rather my day has been filled with green things!

This morning at a board meeting for work, there was a huge box of delicious pastries. One happened to be a spinach croissant - I passed on those greens, knowing I had a spinach smoothie on my agenda for this afternoon!

I'm currently enjoying it now - simple and delicious.

Simple Spinach Smoothie

1 heaping handful of baby spinach
1 cup almond milk (or any milk of choice)
1 scoop vanilla protein powder - I use Aria Protein
1/4 cup plain Greek yogurt
1 frozen banana
2/3 cup frozen mango

Blend and enjoy!

Another green part of my day includes...our beautiful green garden!

Check out those radishes - remember when they were little sprouts?!

Our onions really shot up, which I'm very excited about.

Evan is most excited about those bad boys above - beets!

The jalapeno peppers haven't sprouted yet, so we'll see what happens with those. The thing I've learned the most about gardening is to water regularly. The little seedlings love water, so make sure to be consistent.

To continue with the green theme, I think I'll be making a huge salad beast tonight - complete with roasted beets and sweet potatoes! I just bought a champagne vinaigrette from Trader Joe's, and I really want to try it!

Selfish question: do you have any book recommendations?

I've been whizzing through books left and right and am always looking for great ones to check-out at the library - especially during the summer months when I can sit outside (or on the beach!) and read. I love all types of books - suspense, mystery, chick lit, you name it!
