Happy Memorial Day Weekend, friends! I, for one, cannot believe that it's almost June. Where in the heck did the first five months of 2011 go? Any special plans for the holiday? We're hanging low...Evan has a lot of projects going on. Stanford runs on quarters not semesters, so he's actually finishing up his quarter next week - it's a busy time.
********As I was eating breakfast this morning, I realized that I've had the same thing for breakfast for quite some time. Sure, there have been some breaks in my little routine to have steel cut oats. Other than that? I've had the same breakfast on weekday mornings since January! Remember: weekends are for indulgent treats!
Greek yogurt (Chobani Black Cherry pictured above), 1/3 cup homemade granola and 1 tablespoon chia seeds.
I just haven't gotten sick of this yet. It's delicious and filling - not to mention extremely easy to throw together. This little yogurt bowl has become part of my morning routine, and I'm not complaining.
There is some variety within this breakfast combo - I try to make a different kind of granola every week.
I think I made the best kind yet this week!

Honey Almond Granola

1/4 cup coconut oil
1/4 cup honey
1/2 teaspoon cinnamon
1/4 teaspoon salt
3 cups rolled oats
1 cup slivered almonds
In a medium bowl, whisk together the oil, honey, cinnamon and salt. Add the oats and almonds - using a fork to stir vigorously. Pour on a large baking sheet and place into a cool oven. Then set the oven to 275 degrees. Bake for 25 minutes, stirring every 10 minutes. Cool on baking sheet. Store in an airtight container for 7-10 days.
