**********Good morning! Can you believe it's Monday already? The weekends always go by too fast!
So I usually don't get up early enough in the morning to write a post about breakfast (and I usually have the same breakfast every day: Greek yogurt, homemade granola & chia seeds), but I had to share this morning's with you. Oh, and I'm also trying to get up earlier each day and stop hitting the snooze button a bazillion times. We'll see how this week goes!
I made steel cut oats this morning - also known as Irish oats. After taking some of your suggestions and researching a bit on Google, I found a pretty easy way to make them.
I actually followed an article on The Kitchn. They mentioned cooking the oats for 20-30 minutes and using a 1:3 oats to water ratio.
I only cooked one serving, so it took about 12 minutes.
3/4 cup water
1/4 steel cut oats
1/2 banana, mashed
1 tablespoon chia seeds
1 tablespoon peanut butter
Bring the water to a boil and add the oats. Return to a boil then drop to a simmer. Cook for 10-15 minutes, stirring occasionally. Transfer to a bowl with the mashed banana and chia seeds - stir to combine. Add a dollop of peanut butter. Enjoy!
