This is the sunset we enjoyed last night - gorgeous, right?! We're supposed to have BEAUTIFUL weather over the next 10 days (read: 70s and sunshine!), so I imagine I'll have more sunset pictures to share.
Tuesday, we meet again! Evan and I just got back from picking up our CSA organic produce. Lots of goodies to eat this week!
Greens: spinach, kale, chard & lettuce.
Fruit: apples, oranges & mandarins.
Vegetables: peas, artichokes, carrots, potatoes & baby bok choy.
Look at these miniature carrots!
They're a lot different than those whoppers we had just a few weeks ago. That's what I love about CSA programs - there is even variety within the type of fruit or vegetable each week.
I thought I'd share my menu with you for this week, so you can see how we're going to incorporate this produce into our meals.
Tonight: Sweet Potato & Lentil Salad via Oh She Glows (leftover potatoes from last week)
Wednesday: Chard with Garbanzo Beans & Tomatoes via All Recipes
Thursday: Baked Tofu, Roasted Peas & Carrots
Friday: Steamed Artichokes with Potato-Kale Soup via My Recipes
