Hey, all! So while there seems to be a lot of tofu lovers out there, a few tofu skeptics do exist. I wanted to do a quick PSA and let you know how important it is to PRESS your tofu. They have little contraptions that do this, but you can also do it the old school way: wrap the tofu slices in dishtowels & paper towels then place tofu between two cutting boards - set heavy cook books, fruit bowls, whatever on top. Let it press for about 30 minutes. This drains all the excess water from the tofu - allowing it to better absorb marinade, while keeping a denser texture. Try it!
Alright, it's Tuesday! Evan and I just got back from picking up our CSA produce box. (P.S. Evan normally has lab right now, but it's over because the end of the quarter is next week - he was able to join me today!)

Mmm! I don't care what anyone says...beans are my favorite. I enjoyed some alongside roasted sweet potato "chips" and an oatmeal cookie.
Oh, and since Evan is home right now, I thought I'd snap a picture (without him knowing) - you can see what an engineer in the zone looks like!

Such a cute hard worker, right?! Don't let him fool you. Right after I (sneakily) snapped this picture, he proclaimed it was time for a nap. Psshh.
In his defense, he was up until 3:30 last night working on his tofu press that he's designing/building for me. Right now I kick it the old school way of pressing tofu (cutting boards), but he's building me my very own press!
Somewhat random question: what is your favorite way to eat carrots/favorite recipe?
I have a bajillion carrots in our fridge right now - we get them EVERY week in our CSA box, and last week we got 10! I need some ideas - please and thanks! :)
