Good morning! I have to say, even though the weekends go by so fast, I had a very relaxing past few days and am excited for the week ahead. My birthday is Friday! :)


I wanted to let you know that they announced the results for the Peanut Butter Exhibition. Remember I entered my Peanutty Quinoa Pilaf?! While I did not win, I was named the Runner-Up! This was my first recipe contest and to rank high among 28 entries - well, I am pretty darn excited! Click here to check out the other peanut butter recipes. Because this blog is called The Granola Chronicles, what better way to start your week than with a new granola recipe!


I had a new ingredient to try out:



I had never actually tried oat bran before I bought this bag, so I was looking forward to adding it to my next batch of granola.

 
As always, I followed Chocolate & Zucchini's Basic Granola Formula. It's a no-fail winner!



Cashew Granola

Ingredients:
4 tablespoons maple syrup
2 tablespoons blue agave sweetener
2 tablespoons olive oil
1 tablespoon vanilla
1 teaspoon cinnamon
dash of salt
3 cups old-fashioned oats
1 1/2 cups chopped cashews
1/4 cup oat bran

Directions:
Mix all liquid ingredients in a medium bowl. Stir in cinnamon, salt, oats, nuts & bran. Using a fork, stir vigorously until evenly coated. Pour onto 11x18 baking sheet lined with parchment paper and spread evenly. Place in oven and set it to 300 degrees (no need to preheat!). Stir every 10 minutes - cook for a total of 22-25 minutes - until golden brown.
