Chewy Sans Raisins

So here's the deal. You all LOVE your carrots. I have been inspired by all the suggestions you've been sharing, so I'm going to compile all the comments in a post. Hopefully, you'll be tempted to try carrots in a new way! I'm hoping to have it up tomorrow morning.

Ok, so I'm not sure if this is a normal occurrence out here in northern Cali, but I've seen 3 rainbows in the past 10 days. Isn't that crazy?!


I woke up to this one this morning. It may not always be sunny in the Bay Area during the winter months, but I'll take rainbows in the midst of clouds any day!

As promised, I have a wonderful oatmeal cookie recipe to share with you. The best part? No raisins! I don't mind an occasional handful of those shriveled grapes, but I absolutely cannot stand them in baked goods. The texture completely freaks me out. 


It's just a plain & simple oatmeal cookie. No chocolate, no nuts, NO raisins. I'm a fan of simplicity! Absolutely chewy & soft - you will love this. I promise.


Chewy Oatmeal Cookies
Inspired by: Moms Who Think


Ingredients:
1/2 cup butter, softened
1/4 cup sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 cup whole wheat white flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1 1/2 cups old-fashioned oats


Directions:
In a medium bowl, cream together butter and sugars. Beat in the egg and vanilla.

In a separate bowl, combine the remaining ingredients. Stir into the creamed mixture, little by little until all has been combined. Cover and chill for 30-60 minutes.


Preheat oven to 375 degrees. Using a cookie scoop or tablespoons, shape the dough into balls and place two inches apart on cookie sheets. Bake for 10-12 minutes, until the edges are golden and the middle is just a bit soft. Allow to cool for 5 minutes on cookie sheets then transfer to a wire rack.


Yield: 20 cookies

Well, I'm off to tidy up the apartment and make a big old pot of soup. Evan and I have visitors tonight! Trevor went to college with us, and is a dear friend. He's a fraternity brother of Evan's, and I even took him to my sorority's winter formal my sophomore year!




That would be my brother-in-law, sister, (me), and Trevor...4+ years ago. I look nothing like this picture now! Craziness. P.S. Evan and I started dating about six months after this picture. Oh, college...

Anyway, Trevor is on a road trip right now and is in the area with one of his friends. They'll be stopping by tonight, and I'm just so excited to see another familiar face!
