Hiya, friends! Hope you had a wonderful Tuesday. I must say, I've been enjoying your comments about making special trips to certain stores for particular items. Katie hit up three stores just to find Brussels sprouts! Autumn goes on excursions to find her favorite hummus. Angela buys her produce at one store and other items at a different store - and she saves money that way! Now if only we could build one store that carries everything that we personally wanted. How convenient would that be?!
Moving on, before Evan left for classes today, he left me a little note.
|Yes, we have a white board. I love my engineer!|
Coastal town adventure or Open Space hike? Decisions, decisions. What did I choose?
Coastal town! We're still figuring out the town we'll be visiting, but I'm so excited. I absolutely adore coastal towns. They're so quaint, and I just love their vibe. I'll keep you all updated!
I wanted to share a great recipe with you that we enjoyed tonight. As you know, Evan and I don't eat meat very often - about once every other week (and it's chicken 99% of the time). Anyway, I came across a recipe for slow cooker sausage & peppers and decided to make it tonight. We served it over brown basmati rice.
Some quick notes: No spices/seasonings are required. The flavors from the sausage will be enough - trust me! Also, next time I would use all Smoked Andouille - so good!
Sausage & Peppers
Adapted from: Bite This! - Slow Cooker Sausage & Peppers
2 lbs. chicken sausage (I used half Spicy Italian and half Smoked Andouille)
2 green peppers
2 (14.5 oz.) cans diced tomatoes
1 (6 oz.) can tomato paste
Cut the chicken sausage into 1/2 inch slices. Roughly chop the peppers & onion. Place all ingredients in slow cooker. Set on high for 5-6 hours. Serve over rice or pasta.
Yield: 6 servings
