When I saw Iowa Girl Eats post a recipe for No-Bake Chocolate Peanut Butter Balls last night, I literally dropped my computer and went straight to the kitchen. I've been inspired to try numerous recipes before, but I have NEVER tried a recipe this quickly after seeing it!
These no-bake balls (ha!) make for an excellent snack and are quite filling. They are definitely a great snack to satisfy sugar cravings - and a little bit better for you than just eating a candy bar.
They are a tad sweet, which I assume is from the honey. I have a few ideas swirling around right now for honey substitutions. I'm not going to reveal those quite yet, as I need to do some experimenting first!
No-Bake Almond Butter Balls
Inspired by: Iowa Girl Eats, No-Bake Chocolate PB Balls
1/4 cup old-fashioned oats
1 tablespoon crunchy almond butter
1 tablespoon honey
1/8 teaspoon cinnamon
2 tablespoons chocolate chips
Combine all ingredients in a small bowl - stir using a spoon or fork. Using your hands, shape the mixture into 4 balls. Place on a small plate and refrigerate for at least 30 minutes. Enjoy!
Yield: 4 balls
