First of all, I want to thank you for not judging me for having a whiteboard hanging in our apartment. I let you in on a little personal fact about living with an engineer, and you received it so well! Ha! :)
Look what I woke up to this morning:
So I had to stop at the grocery store on my way home from work to get some EVOO (we were out) and some powdered sugar (I'm making Cookie Dough Balls tonight!). I decided to stop at a store that carries a lot of natural & organic products as well as normal grocery items, and I stumbled across some good finds (which I'll share later this week!). I also found this special treat:

I added in some of my homemade granola, and one of those "good finds" that I got today. Can you spot the mystery find?!

Here's the recipe for the granola I made. I hope you enjoy it!
Honey Maple Granola
(following Chocolate & Zucchini's Basic Granola Formula)
2 tablespoons olive oil
1 tablespoon vanilla
3 tablespoons maple syrup
3 tablespoons honey
1 teaspoon cinnamon
dash of salt
3 cups old fashioned oats
1 cup chopped walnuts
Mix all liquid ingredients in a medium bowl. Stir in cinnamon, salt, oats & walnuts. Using a fork, stir vigorously until evenly coated. Pour onto 11x18 baking sheet lined with parchment paper and spread evenly. Place in oven and set it to 300 degrees (no need to preheat!). Stir every 10 minutes - cook for a total of 22-25 - until golden brown.
