Also, THANK YOU for all your nominations, as well as well wishes for the Peanut Butter Exhibition. I know bloggers say (or I suppose, write) this all the time, but I truly appreciate all your support. You have honestly made my heart so happy this week. 

So I suppose it's about time I share another recipe for tasty granola with you! I used a new (to me) ingredient for the first time: Organic Blue Agave Sweetener from Trader Joe's. Personally, I feel like the taste is very similar to honey - just not as sweet. Very delicious nonetheless! 

Blue Agave Granola
Following Chocolate & Zucchini's Basic Granola Formula

6 tablespoons blue agave sweetener
2 tablespoons olive oil
1 tablespoon vanilla
1 teaspoon cinnamon
dash of salt
3 cups rolled oats
1/2 cup slivered almonds
1/2 cup sunflower seeds

Mix all liquid ingredients in a medium bowl. Stir in cinnamon, salt, oats & nuts. Using a fork, stir vigorously until evenly coated. Pour onto 11x18 baking sheet lined with parchment paper and spread evenly. Place in oven and set it to 300 degrees (no need to preheat!). Stir every 10 minutes - cook for a total of 22-25 - until golden brown.

My sister gave me a subscription of Cooking Light for Christmas - and it just arrived yesterday. I was getting anxious! Tonight, I shall curl up on the couch and enjoy  it cover to cover.

This is the only one I receive - and Evan has a subscription to The New Yorker. He likes current events & intellectual articles; I prefer recipes and pictures of food. We complement each other quite nicely! :)
