So fresh, yet just enough spice - it's a great combination! Use it as a dip for tortilla chips, or top grilled chicken with it - very versatile.
3 medium tomatoes
1 serrano chile, minced
2 tablespoons red onion, minced
1 small bunch of cilantro leaves, chopped
1 lemon, juice only
Pinch of red pepper flakes
1 green onion, chopped
1 tablespoon olive oil
Salt and black pepper to taste
1. Dice mangoes and tomatoes - mix in a medium bowl.
2. Add and combine the rest of the ingredients. Mix well and refrigerate for 30 minutes.
